Pea shoots
Pea shoots are the lovely leaves that adorn the common pea plant. While peas take a whole summer to grow, the leaves are harvested after just two to four weeks. They pack a lot of nutritional value in their small bundles and have seven times more Vitamin C than blueberries, eight times more folic acid than bean sprouts, and four times more Vitamin A than tomatoes.
These tendril-adorned shoots are bright green, crisp, and taste much like their namesake. They pair well with meat, beans, and pastas and can be enjoyed raw or cooked.
